This delicious meal takes only 30-mins from prep to serve and will please even your pickiest eater. It’s very healthy with only a little fat from the cheese. You can also mix and match the veggies with whatever you have in the fridge. Sometimes, I add zucchini or green beans if they’re available.
Ingredients:
Serves: Four, double everything if you want delicious leftovers.
- T1 pound of ground chicken
- 1/2 cup of smoke Gouda cheese
- 1 large onion
- 1 large bell pepper
- 1 large jalapeño pepper
- 1 large habanero pepper
- 2-3 crowns of broccoli
- 1/2 cup frozen peas
- Salt, pepper, paprika, cayenne
- 2 tablespoon Extra Virgin Olive oil or butter substitute
Instructions:
Step One: Sautee chopped onion, jalapeno and habanero in EVOO.
Step Two: Add salt, pepper and cayenne.
Step Three: Add the bell pepper and mix well.
Step Four: Add the ground chicken
Step Five: Cover with paprika and add more salt, pepper and cayenne.
Step Six: Add copped broccoli and mix in well.
Step Seven: Add frozen peas and mix in well.
Step Eight: Sprinkle with grated gouda.
Serve as is, or you can add on top of cauliflower rice.
